I love warm chocolate chip cookies fresh from the oven, and after trying many different recipes, this one is definitely my favorite. These cookies taste like the kind you would buy from the bakery. Now, I'm not claiming that they're the healthiest cookies out there...but they taste so good! It's also the only way I can get my children to get a little oats in their diet!
INGREDIENTS: (Nutrition)
1 cup butter, softened
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla extract
1 teaspoon baking soda (aluminum free)
1 teaspoon salt
1 1/2 cups all-purpose flour (preferably unbleached)
3 cups quick-cooking oats
1 cup semisweet chocolate chips
DIRECTIONS:
Preheat the oven to 325 degrees F (165 degrees C).
In a large bowl, blend the butter, brown sugar, and white sugar until smooth. Mix in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the blended mixture until just blended. Add the quick oats and chocolate chips.
Drop by heaping spoonfuls onto ungreased baking sheets.
Bake for 12-15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
