This is my favorite recipe for pumpkin muffins! It's the result of a combination of ideas from various recipes, and my family can't get enough of these muffins. (Although, they are very sweet, so I don't make them too often!) One great thing about this recipe, is that there is a lot of room for modification to make them healthier, or add your favorite ingredients such as: raisins, walnuts, or chocolate chips. I used a flower shaped muffin pan for the muffins in the picture, and they turned out perfect...like little bread loaves.
INGREDIENTS:
1 cup white sugar
1 cup brown sugar
1/2 cup vegetable oil (substitute applesauce)
2 eggs
1 teaspoon salt
1 15oz can of canned pumpkin
1/4 cup water
3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon ground cloves
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
*Pumpkin spice may be substituted for cloves, cinnamon, and nutmeg.*
Directions:
In a large mixing bowl, beat sugar, oil, eggs, pumpkin and water. Combine flour, baking powder, soda, spices and salt. Add to pumpkin mixture; blend well. Spoon into greased muffin tins, filling 3/4 full.
Bake at 400 degrees F for 15 minutes.
